Good Old-Fashioned Potato Salad

Hey hey people! First of all I’m so sorry I’ve been down on my recipes and content. I’m so so busy of late. I don’t understand how our parents got through adulting! Also my cooking spirits have been on the low because of Jumiafood doing their best with bringing good food right to your doorstep (I’ve tried all restaurants I think I need a free meal).

Last weekend I thought of a lazy girl dish that fills you up so fast and I remembered this good old-fashioned potato salad recipe and pushed my lazy self to cook and post it. It’s so easy to make, can be eaten either hot or cold and cooked under 35 mins!

Oh and since it’s a salad it doubles as a dish on a main course meal so you can add it to your family buffet 🙂

Ingredients

(serves one)

  • 6 potatoes
  • 1 bell paper (diced)
  • 1 shredded onion
  • 2 shredded carrots
  • 1 tbsp of salt
  • 1/4 cup of regular or garlic mayonnaise
  • 3 cups of water

Recipe

Peel and dice your potatoes to a fairly large size. Add salt and water and boil for 30 minutes.

Cut your vegetables in the meantime. Drain water from the potatoes when ready.

Mix your boiled potatoes with the vegetables and mayonnaise. You can also add a few pinches of parsley to garnish your salad!

Serve hot or cold. (I prefer it hot)
